What You’ll Need:
Mozzarella Roll Up – I was inspired to make this dish when collaborating with Natural & Kosher Cheese. They sent me this product and at first I wasn’t sure what to make but then my childhood favorite dish, Chicken Parmesan popped into my head and it all became clear. I will say, this has to be one of the easiest products to use. If you’re short on time and need to throw dinner in the oven, then this is the most perfect product to buy considering there’s literally no prep work involved in cutting the cheese. You literally lay out the mozzarella and roll anything on it and then throw it in the oven. I was quite impressed with how easy it was to assemble my chicken-less parm roll up.
Chicken-less Patties – I love using imitation chicken in my recipes! I used to love eating meat and chicken but over the years I’ve started leaning more towards eating vegetarian foods. I can’t necessarily say it’s because I like to feel and eat lighter considering this recipe is heavy on the cheese but I do feel a lot better when I don’t eat as much heavy meats. I used to not always eat kosher and I grew up loving chicken parmesan. That was one of the hardest dishes to give up eating. Now that there are so many chicken-less options, it’s so easy to recreate my favorite dish. I happen to love the brand Morning Star. Their patties are super crispy and have a great texture to them.
Marinara Sauce – Carbone came out with a kosher arrabbiata sauce and I’m seriously in heaven!! I’ve been trying to find a good spicy marinara sauce for a while now since I’m a huge pasta lover and typically “treat” myself to a bowl a couple times a month. This has so much flavor and a really good kick. A lot of the other arrabbiata sauces on the market don’t really have any type of spice level to it, so I was really impressed that I could actually taste the spice.
Parmesan Cheese – I happened to find legitimate kosher parmigiano reggiano at the super market but you can go authentic or find basic parmesan for this recipe. I can seriously eat a whole block myself so I find that you really can’t go wrong with buying more than what any recipe calls for.
Fresh Basil – I seriously love having basil always on stock in my fridge. It’s not very realistic for me since it’s just me and my husband but whenever I have some in the fridge I try to make multiple recipes that call for basil. It’s just so fresh!
Chicken-less Parm Roll Ups
Ingredients
- 4 chicken-less patties I used Morning Star original chick patties
- 12 oz marinara sauce I used Carbone's Arrabbiata Sauce
- 12 oz mozzarella roll up I used Natural & Kosher Fresh Mozzarella Stuff N Roll
- 1 cup shredded parmesan cheese
- 1/2 cup fresh basil
Instructions
- Pre-heat your oven to 375 F
- Bake the chicken-less patties according to the package instructions. I personally baked mine for 10 minutes each side.
- Coat a baking pan with non-stick cooking spray
- Lay out the mozzarella roll up and coat with marinara sauce. Leave about 1/4 cup over to pour over the dish at the end
- Chop up the chicken-less patties into 1/2" strips and evenly disperse on the mozzarella.
- Finely chop your basil and evenly disperse over the mozzarella, leaving a few tablespoons over to disperse at the end
- Sprinkle parmessan leaving around 1/3 cup over to add to the top before placing in the oven
- Tightly roll the mozzarella mixture
- Pour the rest of your marinara sauce over the mixture and then add parmesan cheese and sprinkle with basil
- Cook for about 15-20 minutes until the mozzarella has completely melted. Keep in mind that it will lose its shape when you take it out of the oven
