What You’ll Need:
Spring Mix Lettuce – I love this type of lettuce because it has so much flavor and I find that it fills me up more than other lettuces. Plus, I’m always trying to find ways to incorporate more fiber and protein into my diet and I love that eating spring mix lettuce is an easy way to accomplish this.
Honey Crisp Apple – There’s a time and a place for all types of apples. I love a green apple with some peanut butter to snack on. Red apples are great when I bake and honey crisp goes perfectly in my salads. It add just enough flavor and sweetness to my dish without being too overpowering. The best time to buy this type of apple is during September through November.
Avocado – I’m obsessed with putting avocado in my salads because I appreciate the creaminess it adds to my salads.
Pecans – I need a crunch in my salads! I always feel bad putting croutons in my salad even though they’re so delicious because what’s the point of eating a salad if it ends up being unhealthy? I’d rather eat pasts then. I’ve found healthy alternatives to add a flavorful crunch to my salads without feeling guilty.
Goat Cheese – I love using goat cheese in my salads. It adds a richness and creaminess to my salad. Plus, I personally need a protein so whether that’s a fish, chicken or cheese, I need some type of hearty protein in my salads. I used the Chevre Garlic & Herb brand. I find that it’s reasonably priced when compared to some of the other goat cheeses that are offered in NYC.
Dressing – I’m all for making homemade dressing, but I appreciate an easy and healthy store bought dressing that I can use when I’m short on time. Brianna’s Champagne Vinaigrette is so rich and flavorful and lasts a while in a fridge.
Meal-Prep Friendly
Aside from slicing an apple and avocado and crumbling some cheese, there’s really no prep work involved. This is essentially the ultimate work week salad when you need something satisfying and filling without the hard labor. Sometimes I can spend 30+ minutes making a salad if there’s a lot to chop up, roast, etc. However, this Apple Goat Cheese Salad takes about 5 minutes to make. I was generous with my prep time in the official recipe when I list 10 minutes of prep time.
Apple Goat Cheese Salad
Ingredients
- 3 cups of spring mix lettuce
- 1 honey crisp apple
- 1 avocado
- 1/2 cup of pecans
- 2 oz of goat cheese I used Chevre Garlic and Herb
- Your favorite vinaigrette dressing to taste I used Brianna's Champagne Vinaigrette
Instructions
- Add all ingredients into a bowl. Top off with some dressing and toss!
