If avocado toast is being basic then I’m as basic as it gets. First, I love how filling this dish is. Second, there’s so much flavor and I get all of my sources of protein, fats and carbs in such a simple way.
What You’ll Need:
Artisanal Bread – I love buying fresh bread. Sourdough happens to be my favorite. If there’s one food that I can eat for the rest of my life without getting sick of it, I can confidently say that’s sourdough bread.
Avocado – I used to rarely buy avocados because it was difficult to keep it fresh and if I didn’t eat it the exact day it needs to be eaten it would go bad. I’ve learned to keep semi-ripe avocados in the fridge so that they last longer. This has been a complete game changer! I’ve been able to start stocking up on avocados so that some that may not be ripe can go in a dark cupboard, while some that I feel may quickly ripen or. go bad can be refrigerated.
Eggs – I typically like buying pasture raised organic eggs. While I’m not vegan, I still believe in buying products that are less harmful for the environment and animals. With that said, if I’m having trouble finding my ideal type of egg I will opt for a lesser quality product but my preference will always be pasture raised organic. Not only do I feel better eating them on an ethical level but you can absolutely taste the difference.
Dill – I absolutely love adding fresh dill to my dishes. Whether it’s potato salad or even in a salad or dressing, it gives a vibrant added flavor to my meals and I’m all for it. Sometimes I opt in for dried dill if I don’t anticipate using a full bunch of fresh dill throughout the week or if I don’t have time to make it to the grocery store.
Everything But The Bagel Seasoning – I love adding this to either toast, scrambled eggs, dips, dressings, fresh bread…you name it and I’ll add it. Since not everyone has a Trader Joe’s near them, I love that you can buy this seasoning on Amazon.
Everything Avocado Toast
Ingredients
- 2 slices artisanal bread
- ½ avocado
- 2 eggs
- 1 tsp finely diced dill
- everything bagel seasoning to taste I used the Trader Joe's brand - Everything But The Bagel Seasoning
Instructions
- Boil the eggs for 10 minutes so that they're a little soft on the inside (or to your liking)
- Smash half an avocado until smooth and spread on bread.
- Thinly slice your hardboiled eggs and add to your toast.
- Top off with dill and everything bagel seasoning.
