Summer Pasta Salad
This fresh Summer Pasta Salad is loaded with veggies. It's the perfect weekday lunch or side dish for a BBQ!
Ingredients
- 12 oz box of tricolor pasta
- ½ cup chopped onions
- 1 head cauliflower
- 1 red bell pepper chopped
- ½ cup light mayo
- 1 tbsp rice vinegar
- 1 tbsp dijon mustard
- salt & pepper to taste
Instructions
- Pre-heat your oven to 350° F.
- Slice your cauliflower into bite size pieces. Spray a baking tray with non-stick cooking spray.
- Lay out your cauliflower and place in the oven for 45 minutes.
- While your cauliflower is roasting, cook the pasta.
- In a small bowl, add the mayo, rice vinegar and dijon mustard. Mix well.
- Once your cauliflower is finished, add it into the pasta along with your peppers and onions. Top off with your dressing and mix well!
- Add salt and pepper to taste.
